750g potatoes peeled and roughly chopped
750g swedes peeled and roughly chopped
salt and pepper
25g butter
Place the vegetables in a large saucepan. Add water to come halfway
up the vegetables.
Add some salt.
Cover and bring to the boil.
Drain and put into the simmering oven cook until the vegetables are
soft enough to mash.
Remove from the oven and drain well. Mash with butter.
Serve hot.
This root vegetable dish is usually served with haggis. In scotland
the orange fleshed root vegetable is known as turnip further south
it is called swede. The two colours orange and white look
attractive together.
