Comments: This is good of fried tortilla shells or fry bread. I
also like to make this up ahead of time. It reheats nicely, by
doing it up ahead of time, you can have a lot of the mess cleaned
up before company comes.
Ingredients:
1 lb. pinto beans
3 lb. boneless pork roast
enough water to cover beans
1/3 cup chili powder
1 jar jalapeno peppers (chopped)
1 onion, chopped
2 cup chicken broth
lettuce, shredded
tomatoes, diced
shredded cheddar cheese
Instructions:
Put water in pan with beans, bring to a boil. Add all but chicken
broth. Put in oven, cover amp; bake 4 hours.
Then add chicken broth amp; bake uncovered for 30 min.
Take meat out amp; shred. Then take beans amp; mush in pan
Put meat back with beans amp; stir
Fix however you want:
As sancho, tostitos, etc.
