Easy Microwave Fudge
Chef Nancy Fox prepares fudge in the microwave.
Ingredients:
3-3/4 cups powdered sugar
1/2 cup unsweetened Dutch cocoa
1/4 cup evaporated skim milk
2 tsp. vanilla extract
1/3 cup margarine
1-1/2 Tbs. semisweet mini chocolate baking bits
Preparation:
In a microwave-safe large bowl, sift together powdered sugar and
cocoa. Stir in milk and vanilla extract. Add margarine, then cook
on high in microwave for two to three minutes or until margarine is
melted and mixture is hot.
Line an eight-inch square pan with aluminum foil and spray foil
with a nonstick cooking spray. Spread fudge onto lined pan.
Sprinkle chocolates evenly over fudge and refrigerate until
firm.
