Butter Cake

Ingredients
175g butter
200g sugar
Rind of 1 orange
1 tsp salt
3 eggs
Combine:
125ml UHT milk
1 tbsp orange juice
1/2 tsp vanilla essence
Sift:
250g superfine flour
2 tsp baking powder
Method
Preheat oven to 175 şC. Grease and line an 18cm square or
round cake pan with greaseproof paper.
Cream butter, sugar and orange rind until light and creamy. Add the
combined milk mixture gradually. Fold in sifted ingredients until
well combined. Beat in eggs one at a time.
Turn mixture into prepared pan. Make a shallow well in the centre.
This will level up the cake when baked. Bake in preheated oven for
40 to 50 minutes or until done when tested with a wooden skew
