Ginseng Chicken Soup

Ingredients

200g chicken meat
·
6g ginseng slices
·
8g cordyceps
·
10g dried red dates
·
1, 500ml prepared Chef master stock
·
6g salt
Method
BRING the master stock to the boil and add chicken meat to cook
until done. Dish out and cool before shredding
the meat into thin strips. Set aside.
Discard scum and add ginseng, cordyceps, dried red dates and salt
to simmer for about 30 minutes. Add cooked
shredded chicken before serving
