Flank Steak with Mushroom Stuffing

2 pounds flank steak
salt and freshly ground pepper -- to taste
1 teaspoon Dijon mustard
STUFFING:
2 tablespoons vegetable oil
1 onion -- chopped
8 ounces mushroom -- chopped
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh chives
1 tablespoon tomato paste
1/4 cup dry bread crumbs
1 teaspoon paprika
GRAVY:
3 slices bacon -- diced
2 small onion -- minced
1 cup hot beef broth
1 teaspoon Dijon mustard
1 tablespoon tomato paste
1. Lightly salt and pepper steak on both sides. Spread one side
with 1
teaspoon mustard.
2. Prepare stuffing: Heat oil in frying pan. Add onion and
mushrooms, cook
3-5 minutes until they are lightly browned and mushroom liquids
have
evaporated.
3. Stir in parsley, chives, tomato paste, and bread crumbs. Season
with
salt, pepper, and paprika. Spread stuffing on mustard side of
steak. Roll up
jelly-roll fashion and tie with thread or string.
4. Prepare gravy: Cook bacon in Dutch oven or heavy casserole
until
partially done. Add meat roll: brown on all sides; approximately 10
minutes.
Add minced onions, saute 5 minutes. Pour in beef broth; cover Dutch
oven.
5. Simmer 1 hour. Remove meat to preheated platter. Season pan
juices with
mustard, tomato paste, and salt and pepper. Serve gravy
separately.
