Makes 8 servings at 2 carbs per serving

4 oz cream cheese, softened
4 whole eggs
1/3 cup heavy cream
1/3 cup Parmesean cheese
1/4 cup Splenda granular
1 teaspoon cinnamon (more if you like)
1 egg yolk
2 cups grated Cheddar cheese
1/4 teaspoon vanilla
4 oz cream cheese, softened
1/4 cup Splenda granular

Preheat oven to 375°F. Beat together the first six ingredients until
smooth. Spray 8" x 11" pan with PAM. Spread grated cheddar cheese evenly
over the bottom of pan and gently pour batter over it. Bake at 375°F for 20
minutes; then lower heat to 300°F Mix the remaining ingredients and beat
until smooth. Gently spread topping over the crust. Bake an additional 25
minutes at 300°F. Allow to cool to room temperature.

*Loginasme's Notes: works fine in 8x8 pan. Good at room temperature but
great cold from the refrigerator too! Would be great with a drizzle of
sugar-free low-carb flavored syrup or low-carb jelly/jam added to the middle
after cooking! Makes a great pre-packed breakfast or lunch item.
