1 package apple or orange jelly powder (85 gram box)
1/2 cup boiling water
1/2 cup brown sugar
1-1/4 cups canned pumpkin
1/2 teaspoon salt
1 teaspoon vanilla
2 teaspoons pumpkin pie spice
1 cup whipped dessert topping or whipped cream
1 baked pastry shell or crumb crust shell, 9-inch
Mix jelly powder with boiling water and stir until dissolved.
Add brown sugar, pumpkin, salt, vanilla, and spice.
Mix well and chill until thickened.
Before completely set, fold in whipped topping or whipped
cream.
Pour into prepared pie shell and chill until set.
Serve with a dollop of whipped cream on top.
Yield: 6-8 servings.
